Garlic & Herb "Faux-tatoes"

 

(vegan, gluten free, low carb)

 

Crispy, buttery, juicy and flavorful. These “faux-tatoes” are just as yummy as roasted potatoes, but have way less carbs! So, what is this secret ingredient you ask? Radishes. Yep, that’s right, radishes. It’s amazing how cooked radishes take on an entirely different taste and texture than raw radishes. They’re creamy on the inside, crispy on the outside, and taste just like a roasted potato! I cooked mine in the air fryer but I’m sure you could crisp them up in a pan as well. Dustin and I got engaged recently, so I’ve been incorporating more healthy recipes into my repertoire #SheddingForTheWedding. These “faux-tatoes” are great to serve along side an entrée, or as home-fries for breakfast and brunch. They’re the perfect substitute to satisfy your craving without any of the guilt. 

Pro Tip: Reserve to salt to season the radishes after they’ve been cooked. If you add the salt in with the rest of the ingredients prior to cooking, you’ll draw the moisture out of the radishes and it will be harder to get them crispy.

Ingredients:

 
2, 16oz bags of radishes
4 teaspoons minced garlic
1/4 cup melted vegan butter
1/4 teaspoon black pepper
3/4 tablespoon fresh sage leaves, chopped
1 tablespoon fresh thyme leaves, chopped
2 tablespoons fresh parsley leaves, chopped
 
sea salt, to taste

Instructions:

 

1.  Clean and trim the radishes. Cut each radish in halves or quarters depending on size. Place the radishes in a large mixing bowl.

2. Melt the butter and pour over the radishes. Add the herbs, garlic, and pepper. Toss all ingredients to coat thoroughly. 

3. Cook in batches in the air fryer at 400 degrees Fahrenheit for about 15 minutes or until golden brown and crispy.

4. Sprinkle with sea salt and serve immediately.
