Sweet & Spicy Pineapple Salsa

 

The summer weather is here and I ‘ve got a wonderfully fun, and fresh addition to your next backyard BBQ: Fresh Pineapple Salsa. It’s a little sweet, a little spicy, and 100% delicious. You can control the heat of your salsa by by simply including or omitting the seeds from the jalapeno. If you prefer your salsa on the spicier side, simply add more of the seeds! This can be made ahead of time or right before you’re ready to serve. This salsa is perfect along side blackened chicken, pulled pork or piled on top of some fresh fish tacos! It’s a guaranteed crowd pleaser that will brighten up your summertime soiree!

Ingredients:

1 Ripe Pineapple, 1 – 1/2 inch dice
1 red onion, small dice
2 large jalapenos, fine dice
3 tablespoons cilantro, chopped
2 tablespoons honey
Zest and juice of one lime
Pinch of sea salt
 

Instructions:

 

1. Carefully cut the rind off of the pineapple and cut the flesh away from the core. Cut the pineapple into 1- 1/2 inch dice. I prefer mine on the smaller side as opposed to chunky. Place pineapple into a large mixing bowl and set aside.

2. Dice the jalapeno and red onion. Again, feel free to change the size of the cut based on your preferences. Chop the cilantro and add with the vegetables to the mixing bowl.

3. To the mixing bowl, add the honey, lime zest, lime juice, and salt. Toss to combine. Adjust seasonings to taste.

4. Serve immediately, or store in the fridge for up to 2-3 days.
