B.L.T. Pasta Salad

This is the most delicious spinach-artichoke dip! It’s creamy, cheesy, and full of flavor. This recipe makes enough to feed a crowd so it’s perfect for parties or Sunday football. The most complicated part about this recipe is trying not to eat it before your guests do.
Ingredients:
2, 15oz cans of artichokes quarters, drained and diced
22oz spinach, rough chop
10 garlic cloves, finely chopped
Olive oil
3/4 teaspoon sea salt
3/4 teaspoon black pepper
16oz cream cheese room temperature
1/3 cup sour cream
1 cup shredded Parmesan
1 + 1/2 cups shredded mozzarella
1 cup sliced Swiss, diced
1/4 teaspoon black pepper
1/4 teaspoon sea salt
Instructions:
1. Coat the bottom of a large pot, or nonstick skillet with tall sides, with olive oil. Over medium high heat sauté the spinach until tender, and any water is evaporated.
2. Add the garlic, artichokes, 3/4 teaspoon of salt and pepper and cook for another 3-5 minutes. Remove from heat and allow to cool until it reaches room temperature.
3. Once the vegetables are cool, add them to a large mixing bowl with the remaining ingredients and combine thoroughly.
4. Add the dip to a small Dutch oven and cook at 425 for 40minutes. Remove the lid and broil until cheese starts to brown. Serve immediately.
