Fresh Fig Tart with Honeyed Goat Cheese, Thyme, & Walnuts

(yields 2 tarts)

Saw some really gorgeous fresh figs at Trader Joe’s and I just had to buy them. And I mean, when you buy figs, you gotta pick up some goat cheese, too, am-I-right? They’re a match made in heaven. Seriously, name a better duo – I’ll wait.

This tart is seriously divine! It’s a simple, yet elegant way to enjoy fresh figs. Walnuts add wonderful texture, the thyme is seasonal and comforting, and the fresh figs give a juicy burst of sweetness. This is a great appetizer to serve at parties. It’s so easy to make, but looks so impressive. 

 

Ingredients:

 

14 figs, rinsed and quartered

8oz mascarpone cheese

8oz ricotta

8oz goat cheese, room temperature

2 tablespoons thyme leaves, roughly chopped

2 + 1/2 tablespoons good quality local honey, plus more for garnish

4 tablespoons heavy cream

1/2 teaspoon sea salt

2 sheets frozen puff pastry, thawed

1 large egg

Instructions:

 

1. Preheat oven to 400 degrees Fahrenheit.

2. With an electric hand mixer beat the mascarpone, ricotta, goat cheese, thyme, honey, salt, and 2 tablespoons of cream until smooth and fluffy. Set aside.

3. Whisk the egg with the remaining 2 tablespoons of cream and set aside. 

4. Lightly flour counter or workspace and roll each sheet of pastry out to 12x10in. Place in the refrigerator to chill.

5. Remove pastry from the fridge and brush with egg wash. Use a fork to poke holes in the pastry, leaving a ½ inch border around each pastry sheet.

6. Divide goat cheese and thyme mixture evenly between the pastry sheets. Spread inside of the border of the pastry. 

7. Bake the tarts for 23 minutes, rotating the pans and the shelves they’re on half way through. After 23 minutes, remove from oven and quickly arrange figs on the tarts. Sprinkle with walnuts and place back in the oven for another 7 minutes. Crust should be golden brown and crispy all around. Continue cooking if the middle is not crisp enough.

8. Allow to cool for 5-7 minutes. Drizzle with honey before serving.
