Smoky Chipotle & Caramelized Garlic Aioli

This is one of those recipes that I’ve been making forever! Not just because it’s super simple, but it’s so delicious you’re gonna find yourself wanting to put it on everything. Believe me, I’ve seen people put this sauce on the most random stuff because it is just that good! You can use regular or vegan mayo for the base. If you do use vegan mayo, I personally recommend Follow Your Heart’s Vegenaise. This aioli is smoky, creamy, garlicky (you know I’m a big fan of the clove!) and has just the right amount of heat.This makes a decent amount of aioli, and the recipe can be halved, but like I said you’re gonna want to use it on everything you make! It’s perfect on burgers, sandwiches, or as a dip for ries! It also happens to be an aboslute slam dunk when paired with some crisp and juicy Fried Green Tomatoes like these bad boys I whipped (pictured above).


Ingredients:

 

10 large garlic cloves, whole

16oz mayonnaise

7oz can of chipotle peppers in adobo sauce

1/2 teaspoon sea salt

1/4 teaspoon smoked paprika

Olive oil 

Instructions:

 

1. Coat a small sauté pan with olive oil. Saute the whole garlic cloves on medium-low heat, turning frequently, until all sides are an even golden brown. Set pan aside and allow to cool to room temperature. *You do not need to remove the garlic from the oil. 

2. Put the mayo, salt, and smoked paprika into a blender or food processor. Remove 2-3 chipotle peppers from the can and an additional 2 tablespoons of the adobo sauce and add them to the processor. Add all the garlic cloves and 2 tablespoons of the oil they were cooked in to the blender. Process until smooth.
