Vegan Dark Chocolate Mousse

Who doesn’t love chocolate mousse? Especially one that’s fool proof! This mousse is so easy. I have been making it for years. It only has 4 ingredients and takes no time to make. It’s delicious on its own, but also works really well as a pie filling!
 
Ingredients:
1 + 1/2 16oz packages of silken tofu
1 + 1/2 teaspoons vanilla extract
2 tablespoons honey
1 9oz bag of enjoy life dark chocolate morsels
 
Instructions:
1. Place tofu, honey, and vanilla in a food processor and blend until smooth
 
2. Melt the chocolate in a double boiler. Allow to cool for 2-3 minutes.
 
3. Gradually fold the blended tofu into the melted chocolate. Mix thoroughly to make sure all is incorporated.
 
4. Refrigerate until cold.
