Fall-Spiced Roasted Almonds

 

Sugar, spice and everything nice; that’s what these almonds are made of. They’re perfect for the holiday season! You can make a big batch and give them as gifts, or place a few bowls out for guests to snack on during holiday parties. 

 

Ingredients:

2 + 1/2 cups whole almonds
1/2 teaspoon pumpkin spice
1/2 teaspoon ground cinnamon
1/4 brown sugar
3/4 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon water
1 egg white
1/4 cup brown sugar
1 tablespoon white sugar
 
Topping:
1 + 1/2 tablespoon granulated sugar
1/4 teaspoon cinnamon 
1/8 teaspoon pumpkin spice

Instructions:

 

1. Preheat oven to 250 degrees Fahrenheit. Line a sheet pan with parchment paper, set aside.

2. In a medium mixing bowl whisk the egg white, water, and vanilla until light and frothy. This only takes about a minute.

3. Add the almonds, both sugars, spices, and salt and mix until thoroughly coated. 

4. Spread almonds onto the sheet pan and bake for about an hour (I baked mine for 1 hour and 8 minutes exactly), mixing the almonds halfway through. 

5. Mix together the ingredients for the sugar-spice topping and set aside. 

6 After removing the almonds from the oven, allow them to cool for about 5 minutes.  Remove the parchment paper from the sheet pan and discard. Place the almonds in a mixing bowl and sprinkle with the sugar-spice topping. Gently toss, but make sure the almonds are evenly coated. Pour back on to the sheet pan and allow to cool. Store in an airtight container.
