Grown-Up Peanut Butter Ritz Sandwiches

(makes 46)

These little cuties are the easiest, no-bake dessert! These are basically Ritz bits cooler, older sister. And what’s really great? They only have 5 ingredients! Creamy peanut butter, honey, sea salt, Ritz, and white chocolate – simple and oh-so-yummy! I had so much fun making these, especially when I added those happy little sprinkles! These are really great because you can dress them up for any occasion or holiday! Christmas, Halloween, baby showers, – the possibilities are endless. I’m going to make these again for the Fourth of July, because I think these would be super adorable with red, white, and blue sprinkles! They’re a little sweet, a little salty, and 100% delectable.

Ingredients:

 
1/2 lb creamy peanut butter
1 + 1/3 tablespoon local honey
1/8 teaspoon sea salt
2, 12 oz bags of white chocolate chips
1 box Ritz crackers

Instructions:

 

1. Line 2 sheet pans with parchment paper and lay about 3-3 + 1/2 sleeves of the crackers out onto the sheet pans with the salted side of the cracker face down, leaving the smooth flat surface facing up.

2. Mix the peanut butter, honey, and salt together in a medium mixing bowl.
 
3. Using a small offset spatula (or butter knife if you don’t own one), spread 1 teaspoon of the peanut butter mixture evenly on the flat side of each cracker. Repeat until all the filling is used.
 
4. Top each peanut buttered cracker with another Ritz, making sure the textured, salted side is on the outside. Repeat until all are covered and set aside.
 
5. Melt the white chocolate in a double boiler. Dip half of each peanut butter sandwich into the white chocolate gently and return back to the parchment lined sheet pan. Top with desired toppings/sprinkles. Leave at room temperature to set/harden. Store in an air-tight container for 2-3 days.
